5-Minutes Breakfast Recipes

Chocolate Peanut Butter Breakfast Bars (Gluten-Free/Vegan)

Serves: 12-16 bars

These are very easy kids will love them. Just throw everything into a bowl, mix, spread in a pan, and wait for it to firm up, store in the freezer for an hour or while they are firm enough to eat.  It’s good to know your child is getting a healthy breakfast.

Ingredients

  • 1½ cups rolled oats (use gluten-free if desired)
  • ¼ cup flax seed meal
  • ⅛ cup chia seeds
  • ¼ cup sunflower seeds
  • ¼ cup sesame seeds
  • ⅓ cup pumpkin seeds
  • ½ cup cashews
  • ½ cup almonds
  • ½ cup agave nectar
  • 1 cup natural peanut butter (or nut butter of choice – I used almond butter)
  • ½ cup vegan, gluten-free chocolate chips (such as Enjoy Life Mini Chips)

Instructions

  1. Line an 8×8 (or similar size) pan or baking dish with parchment paper. Leave extra on the sides to use as handles for removing the bars later.
  2. In a large bowl, combine the oats, flaxseed meal, seeds, and nuts; mix thoroughly.
  3. Add agave nectar to the mixture and stir until well coated. Add peanut butter (or other nut butter) to the mixture and mix until well combined.
  4. Scoop the mixture into the prepared pan/baking dish and press firmly until it is evenly distributed. Original recipe instructs to allow mixture to then sit overnight (to firm up) before cutting into bars. If not that patient—put it in the freezer for an hour or so, it seems to work just fine.
  5. Using the parchment paper handles, remove the entire block from the pan/baking dish, then cut into bars.

Notes

  • You can substitute your favorite nuts/seeds for any you don’t have on hand or don’t like. You could sub dried fruit for chocolate chips, too.
  • You may find the bars start to lose their firmness if left out for too long so it is best to store them in the freezer. When storing the bars in a container, place a sheet of parchment paper between the layers to avoid bars sticking together.

Savory Oatmeal and Soft Boiled Egg

A delicious savory breakfast dish packed with goodness, it’s simple and quick to make so what’s not to like!

Prep time: 5 mins

Ingredients

  • ½ cup quick-cooking rolled oats
  • Coarse salt and ground pepper
  • Nonstick cooking spray
  • 1 large egg
  • 2 tablespoons shredded sharp cheddar cheese
  • 1 tablespoon thinly sliced scallion greens

Instructions

In a small saucepan, bring 1 cup water to a boil. Add oats and pinch of salt; stir, reduce heat, and simmer until tender, about 5 minutes. Meanwhile, heat a small nonstick pan over medium. Coat lightly with cooking spray. Add egg and cook until white is set and yolk is still runny, about 3 minutes. Season egg to taste with salt and pepper. Serve oatmeal in a bowl topped with cheese, egg, and scallion greens.

Homemade Muesli with Oats, Dates & Berries

Prep time:  5 mins / Cooking:  2 mins

Serves 4 

Packed with oats, pecans, seeds, dates, puffed wheat, and berries, this delicious breakfast muesli will help you to start your day the right way.

Ingredients

  • 1 cup of traditional Oats
  • 12 pecan nuts, broken into pieces
  • 2 tbsp sunflower seeds
  • 6 pitted Medjool dates, snipped into pieces
  • ¼ cup high-fiber puffed wheat (we used Good Grain)
  • 2 ½ cup pots bio yogurt
  • 2 cups mixed berries, such as raspberries, strawberries, and blueberries
  • Sprinkling of ground cinnamon (optional)

Method

  1. Tip the oats into a frying pan and heat gently, stirring frequently until they are just starting to toast. Add the pecans and seeds to warm briefly, then tip into a large bowl and toss so they cool quickly.
  2. Add the dates and puffed wheat, mix well until thoroughly combined, then serve topped with the yogurt and fruit, and a sprinkling of cinnamon, if you like.

Easy 5 Minute Crepes

Crepes are an absolutely delicious European classic. With just five minutes of prep time, this is one of the fastest and most delicious recipes ever! Serve these with some fresh strawberries and a dusting of powdered sugar and you’re all set for a satisfying tasty breakfast that everyone can enjoy.

Time needed

2 min preparation + 3 min cooking

Serving Size

2-4 servings

Ingredients

  • 1 tablespoon butter
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 tablespoon sugar or sugar substitute
  • 1/2 teaspoon salt
  • 1 1/2 cups whole milk (you need the fat from the whole milk)

Instructions

  1. Melt the butter for approximately 30 seconds in the microwave, or until just melted (do not allow it to separate). While whisking, gradually add the remaining ingredients. Continue to whisk until it’s very smooth. There should not be lumps like a pancake batter.
  2. In a non-stick skillet over medium heat, heat the pan for about 2 minutes. Spray with cooking spray (it needs to be extra non-stick), and gently ladle a bit of the batter into the pan. Swirl the pan around over the heat so the batter is well distributed. Cook for about 1 minute per side, and remove from heat. Fold in your favorite fillings and dust liberally with powdered sugar.

Quick & Easy Avocado Toast

There’s a reason avocado toast is so popular—it’s loaded with healthy fats, it’s delicious, and it’s quick. This recipe is also super customizable; use any bread you like and keep it simple with hemp seeds and cucumber, or go nuts with additional veggies or drizzles of hot sauce.

Ingredients

  • 2 slices of toasted Ezekial bread (or any kind of bread)
  • 1/2–1 ripe avocado, depending on the size

Toppings

  • small handful microgreens
  • 3 slices of cucumber, halved
  • sprinkling of hemp seeds
  • crushed red pepper flakes (optional)
  • spritz of fresh lemon juice

Instructions

  1. Spoon out the avocado on each piece of toast and lightly mash with a fork, spoon or knife.
  2. Use as much or as little avocado as you prefer. It all depends on the size of the avocado.
  3. Decorate with your favorite toppings.
  4. Enjoy!

Protein Breakfast Sandwich

Serving:        1 sandwich

Prep Time:   2 mins

Total Time:   5 mins

This quick sandwich is packed with protein and good fats to kick your day off. Skip the fast food!

Ingredients

  • 1 muffin, toasted
  • 1/4 cup black beans
  • Pinch of chili powder
  • Pinch of garlic powder
  • 1/4 avocado
  • 1 large egg
  • 1/2 ounce cheddar cheese, grated
  • Hot sauce
  • Salt and pepper

Method

1) Toast the muffin.

2) Whisk egg in a bowl and microwave on high for 65 seconds. Remove egg and fold it into a circle shape the size of the muffin. Top with cheese and microwave for another 15 seconds.

3) Mash black beans (drained and rinsed) with chili powder, garlic, and a pinch of salt and pepper.

4) Spread black beans on the muffin and top with the avocado. Place hot cheesy egg on top of the avocado and season with salt and pepper. Add a dash of hot sauce.

Eat the sandwich right away or wrap it in heavy-duty foil and take it on the go!

peanut butter sandwich

Peanut Butter and Jelly Sandwich

Peanut butter and jelly makes the perfect fast breakfast.  It’s also an ideal family breakfast, the kids will enjoy it too. Five minutes is all it takes.

For added fiber use whole-wheat bread (toasting is optional). Spread the peanut butter onto the bread.

Use sugar-free preserves made from whole fruit to keep down the calories and added sugar.

If you crave a more traditional morning meal, skip the preserves and add sliced bananas to your sandwich. For a really fast breakfast, prepare them the night before — the bread won’t get soggy.
